Not only are these super easy, they are also DELICIOUS!! I didn't know what I was missing with the frozen kind. (Recipe from allrecipes.com.)&lt;br /&gt;.&lt;br /&gt;1/2 cup flour&lt;br /&gt;1/3 cup yellow cornmeal&lt;br /&gt;2 teaspoons salt&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;5 cups peeled and shredded potatoes&lt;br /&gt;1/3 cup vegetable oil&lt;br /&gt;2 eggs&lt;br /&gt;1 onion, minced&lt;br /&gt;1/3 cup vegetable oil&lt;br /&gt;&lt;br /&gt;In a large bowl, mix together the flour, cornmeal, salt and baking powder. Add potatoes, 1/3 cup oil, eggs and onion and mix until evenly blended. Heat 1/4 cup oil in large skilled over medium high heat. Drop heaping tablespoons of the potatoes into the hot oil, flattening slightly. They taste alot like regular potato chips.  Again, this recipe comes from &lt;a href="http://allrecipes.com/"&gt;allrecipes.com &lt;/a&gt;&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="left"&gt;1 bunch kale&lt;/div&gt;&lt;div align="left"&gt;2-3 tablespoons olive oil&lt;/div&gt;&lt;div align="left"&gt;seasoned salt&lt;/div&gt;&lt;div align="left"&gt; &lt;/div&gt;&lt;div align="left"&gt;Preheat oven to 350. Line a non insulate cooke sheet with parchment paper. (I didn't have any so I just Pammed a cookie sheet). With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces (not too small because they shrink). Drizzle with olive oil and sprinkle with seasoned salt. (I put it all into a bowl and mixed it up. It got a lot better coverage that way). Spread out on cookie sheet. Bake until the edges brown but are not burnt. On the way to Vegas we stopped for dinner in Baker at Mad Greek. I just had a grilled cheese sandwich. But I saw these little pastry looking things and it said they were &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;phyllo&lt;/span&gt; dough filled with spinach and feta cheese. T had said I could order whatever I wanted and I wanted to try these. The were &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;soooo&lt;/span&gt; good! It took me awhile to find a recipe for them. It's a lot of work, too, but it was fun to make. I got this recipe from myhusbandcooks.wordpress.com.&lt;br /&gt;&lt;br /&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;SPANAKOPITA&lt;/span&gt;&lt;br /&gt;16-20 sheets &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;phyllo&lt;/span&gt; dough&lt;br /&gt;1/4 up butter (melted)&lt;br /&gt;&lt;br /&gt;Filling:&lt;br /&gt;1 1/2 cup fresh spinach&lt;br /&gt;1/4 lbs feta&lt;br /&gt;1/2 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;onion&lt;/span&gt;&lt;br /&gt;4 cloves garlic&lt;br /&gt;1 tablespoon olive oil&lt;br /&gt;1 egg&lt;br /&gt;1/2 teaspoon pepper&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;&lt;br /&gt;Special equipment:&lt;br /&gt;pastry brush&lt;br /&gt;&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;silicon&lt;/span&gt; mat or parchment paper (I used neither)&lt;br /&gt;&lt;br /&gt;1. Follow directions for use on &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;phyllo&lt;/span&gt; dough for defrosting and preparing to use.&lt;br /&gt;2. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;Preheat&lt;/span&gt; oven to 400.&lt;br /&gt;3. In a food processor (I just used my little electric chopper), add the spinach and process for 10 seconds or until the leaves are well chopped. Add the onion (chopped into chunks to make it easier to process) and whole garlic cloves.  Process again for about 5 seconds or until the onion and garlic are small pieces. Now add the remaining filling ingredients and pulse a few times until all of the ingredients are integrated.&lt;br /&gt;4. &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;Carefully&lt;/span&gt; unroll the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_9"&gt;phyllo&lt;/span&gt; dough. It's delicate. You want to unravel it, so the sheets are laid out and easy to get to. Take one sheet and lay it out on a wide open surface. Next you want to take your pastry brush and melted butter and light brush the sheet. Then lay down another sheet over the top of the first sheet and brush with butter. R&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;epeat&lt;/span&gt; until you have 4 sheets down. NOTE: cover the unused &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;phyllo&lt;/span&gt; dough with a lightly damp towel, it dries out really easy.&lt;br /&gt;5. Using a sharp knife or pizza cutter, slice the brushed sheets from short side to short side, making them about 2"-3" wide.&lt;br /&gt;6. Dab about a tablespoon of filling on one of the far sides of the dough strips. Fold over one of the corners and cover the filling to make a triangle. Push the triangle over, continue this all the way to the end of the strip. It's like folding a flag.&lt;br /&gt;7. Place on a cookie sheet lined with parchment paper or a silicon mat (like I said, I didn't have either, I just "&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_12"&gt;Pammed&lt;/span&gt;" the cookie sheet. They can be fairly close together because the don't really expand.&lt;br /&gt;8. Brush the tops again with a bit of melted butter. Bake for 20 minutes or until golden brown. Let cool for about 5 minutes. These were &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;sooo&lt;/span&gt; yummy!!!!&lt;br /&gt;.&lt;br /&gt;4 lg baking potatoes, baked&lt;br /&gt;3 tablespoons vegetable oil (or olive oil)&lt;br /&gt;1 tablespoon grated &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;parmesan&lt;/span&gt;&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/4 teaspoon garlic powder&lt;br /&gt;1/4 teaspoon paprika&lt;br /&gt;1/8 teaspoon pepper&lt;br /&gt;8 bacon strips, cooked and crumbled (I just used &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;bacos&lt;/span&gt;)&lt;br /&gt;1 1/2 cup shredded cheddar&lt;br /&gt;1/2 cup sour cream&lt;br /&gt;green onions, sliced&lt;br /&gt;&lt;br /&gt;Cut baked potatoes in half lengthwise and scoop out pulp, leaving about 1/4 inch shell (save pulp for another use). I then cut them in half horizontally also, made them easier to handle as appetizers. Combine oil, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;parmesan&lt;/span&gt;, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;salt&lt;/span&gt;, garlic powder, paprika and pepper; &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;brush&lt;/span&gt; over both sides of skins. Bake at 475 for 7 minutes; turn. Bake until crisp, about 4-5 minutes more. Sprinkle bacon and cheddar inside skins. Bake 2 min more or until cheese is melted. Lightly butter muffin tins or place paper cupcake holders in pan and set aside. &lt;/div&gt;&lt;div align="center"&gt;Beat together the cream cheese, egg, sugar and salt.    8oz tomato sauce, 16oz pkg of noodles, spices, and 1 1/2 cups cheese.&lt;br /&gt;For American, I use tri-color rotini noodles, cheddar cheese, and I used McCormick hamburger spice, maybe about 2 teaspoons.&lt;br /&gt;&lt;br /&gt;For Italian, I would use penne noodles, mozzarella, and italian seasoning (basil, oregano) and add a little parmesan and ricotta.&lt;br /&gt;&lt;br /&gt;For Mexican, I would use probably penne noodles, taco cheese (or pepper jack), and taco seasoning.&lt;br /&gt;&lt;br /&gt;You cook the noodles and brown the meat. Add the spices to the tomato sauce. Add this to the meat mix and fold in noodles. In a resealable plastic bag, mix together flour and spices (I didn't use a bag, I used another bowl and dredged the chicken). Place chicken in bag, seal and shake to coat. Dip chicken in milk and egg mix, then once more shake in bag with flour.  Let sit for 10 minutes.Reserve 2 tablespoons of flour mixture.&lt;/div&gt;&lt;div align="left"&gt;In a large skillet, heat oil to 365. Place coated chicken in the hot oil, and brown on all sides. Reduce heat to medium-low and continue cooking chicken until tender, about 30 minutes (with the boneless breasts it was more like 20). Remove chicken from skillet and drain on paper towels.&lt;/div&gt;&lt;div align="left"&gt;Discard all but 2 tablespoons of the frying oil. Over low heat, stir in 2 tablespoons of the reserved flour mixture. Stirring constantly, cook about 2 minutes. Whisk in chicken broth, scraping browned bits off bottom of skillet. Stir in 1 cup milk, and bring all to a boil over high heat, stirring constantly. Reduce heat to low, and simmer for about 5 minutes. Season with spices. Bring water to a boil and cook ribs until tender, 45 minutes. Preheat oven to 325. Pour some bbq sauce to barely cover bottom of 9x13 inch pan (I use disposable metal ones, but you can use glass). Remove ribs from water and place in pan. Cover with rest of bbq sauce. Cook sausage in a skillet; drain and cut into 1/2 inch slices; add to pasta. In a saucepan, melt butter. Stir in the flour, 1 teas salt and 1/4 teas pepper until smooth; gradually add milk.  Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat and stir in 1/4 cup parmesan. Add to pasta and sausage. In a bowl, combine egg, ricotta, and remaining parmesan, salt and pepper. Add to pasta mix and stir to combine. Sppon into a greased deep casserole dish and sprinkle with mozzarella.(I usually stir a little of the mozzarella into the pasta also). He didn't even use ketchup or BBQ sauce!!! It was super simple, too.&lt;br /&gt;&lt;br /&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;GRILLED GARLIC HERB CHICKEN&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;4 or 5 boneless, skinless chicken breast halves&lt;/div&gt;&lt;div align="center"&gt;1 cup olive oil&lt;/div&gt;&lt;div align="center"&gt;1/2 cup white sugar&lt;/div&gt;&lt;div align="center"&gt;1/2 tablespoon honey&lt;/div&gt;&lt;div align="center"&gt;4 cloves garlic, crushed&lt;/div&gt;&lt;div align="center"&gt;1 teaspoon dried basil&lt;/div&gt;&lt;div align="center"&gt;1 teaspon dried thyme&lt;/div&gt;&lt;div align="center"&gt;1/2 teaspoon cayenne pepper&lt;/div&gt;&lt;div align="center"&gt;1 teaspoon salt&lt;/div&gt;&lt;div align="center"&gt;1/2 teaspoon dried oregano&lt;/div&gt;&lt;div align="center"&gt;1/4 teaspoon dried parsley&lt;/div&gt;&lt;div align="center"&gt;1 pinch dried sage&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;Place chicken in gallon size, zip close plastic baggie. I had never made it before so it was a new challenge for me. I didn't taste it , but he said it was "great!"&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;**********************************&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;COCONUT SHRIMP&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;1 egg&lt;/div&gt;&lt;div align="center"&gt;1/2 cup flour&lt;/div&gt;&lt;div align="center"&gt;2/3 cup flat, warm beer&lt;/div&gt;&lt;div align="center"&gt;1 1/2 teas. baking powder&lt;/div&gt;&lt;div align="center"&gt;1/4 cup flour&lt;/div&gt;&lt;div align="center"&gt;a shake or 2 of garlic powder AND onion powder&lt;/div&gt;&lt;div align="center"&gt;2 cups flaked coconut&lt;/div&gt;&lt;div align="center"&gt;24 or so shrimp, deveined and shelled&lt;/div&gt;&lt;div align="center"&gt;oil for frying (enough to completely cover the shrimp)&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;In medium bowl, combine egg, 1/2 cup flour, beer, baking powder, garlic powder and onion powder. Place 1/4 cup flour in separate bowl, and coconut in another separate bowl (you've got 3 bowls going now). Hold shrimp by the tail and dredge in flour, shaking off excess. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees in a deep fryer.  Fry shrimp in batches. Cook, turning once until golden brown (it took about 5 minutes or so for each batch). align="center"&gt;Whish together the lime juice, tequila, olive oil, garlic salt, cumin, and pepper in a bowl until well blended. Pour into a large resealable plastic bag; add the shrimp, seal bag and turn to coat evenly. Refrigerate 1 to 4 hours.&lt;/p&gt;&lt;p align="center"&gt;Drain and discard marinade from shrimp. Place on soaked wooden skewers, alternating with lime slices. I made sirloins for the kids.&lt;/p&gt;&lt;p align="center"&gt;Combine all ingredients (except the bacon and steaks) in a bowl and whisk well. Pierce steaks with fork. Place steaks in a resealable plastic bag. Pour marinade in and coat. Marinate in fridge for at least an hour. Discard marinade. Wrap bacon around steaks and secure with toothpicks. Keep adding small amounts of water until it becomes a firm dough which is only slightly sticky (you won't need to add the whole cup). I took pictures of everything and will try to share the recipes this week.&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;Let's start with the appetizers:&lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt; &lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;STUFFED MUSHROOMS&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;Here are the ingredients:&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;3 slices of bacon, cooked and crumbled (I just use Bacon Bits)&lt;/div&gt;&lt;div align="center"&gt;8 crimini mushrooms&lt;/div&gt;&lt;div align="center"&gt;1 Tablespoon butter&lt;/div&gt;&lt;div align="center"&gt;3 Tablespoons chopped onion&lt;/div&gt;&lt;div align="center"&gt;3/4 cup shredded Cheddar cheese&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;a href="http://bp0.blogger.com/_pRQTu_cLTkc/SIThKoug3pI/AAAAAAAAA20/Mkymi6Qkpk8/s1600-h/july192008+009.jpg"&gt;&lt;img id="BLOGGER_PHOTO_ID_5225549040504069778" style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://bp0.blogger.com/_pRQTu_cLTkc/SIThKoug3pI/AAAAAAAAA20/Mkymi6Qkpk8/s400/july192008+009.jpg" border="0" /&gt;&lt;/a&gt; Preheat oven to 400. &lt;/div&gt;&lt;div align="center"&gt;Remove mushroom stems. Set aside caps. Chop the stems. In a saucepan over medium heat, melt the butter. Slowly cook and stir the chopped stems and onion until the onions is soft.&lt;/div&gt;&lt;div align="center"&gt;In a bowl, stir together the mushroom stem mix, bacon and 1/2 cup of Cheddar. I use my hand mixer. Fill each pepper half and put on baking sheet. It was so easy to make that KT did it mostly all by herself. It was a BIG hit, especially with the kids.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;strong&gt;OREO &amp;amp; FUDGE ICE CREAM CAKE:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1/2 cup hot fudge ice cream topping, warmed&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 tub (8 oz.) Cool Whip, thawed, divided&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 pkg. (4-serving size) Jell-O Chocolate Flavor Instant Pudding &amp;amp; Pie Filling&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;8 Oreo Chocolate Sandwich Cookies, chopped (about 1 cup) **I crushed ours**&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;12 vanilla ice cream sandwiches, unwrapped&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Pour fudge topping into medium bowl.  Add 1 cup of the Cool Whip; stir with wire whisk until well blended.  Add dry pudding mix; stir 2 minutes or until well blended.  Gently stir in chopped cookies; set aside.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Arrange 4 of the ice cream sandwiches, side-by-side, on 24 inch long piece of foil; top with half of the Cool Whip mixture.  Repeat layers. Top with remaining 4 ice cream sandwiches.  Frost top and sides of dessert with remaining plain Cool Whip. Bring up foil sides. Double fold top and ends to loosely seal packet.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Freeze at least 4 hours before serving.
